1/2 box Tolerant Green Lentil Safari
2 Tb. Canola oil
1 cup diced carrots
1 cup frozen peas
*You can use 1 full bag of frozen peas and carrots in a pinch!
4 oz diced ham
1⁄2 cup scallions, sliced
4 Tb. Soy Sauce
2 Tb. Sesame Oil
2 Tb. Sesame Seeds, toasted
Cook Green Lentil Safari pasta according to box. Set aside 1⁄2 cup pasta water before draining. Set aside noodles for tossing into dish.
*You can make this with cold noodles too!
Heat the canola oil in a large skillet or even better – a wok! When hot, add the diced carrots. Stir so the oil coats the carrots and let glisten for about 1-2 minutes. To soften, add about 1⁄4 cup pasta water. Let cook about 6-8 minutes or until the carrots are soft.
To this, add the ham. Stir often so it does not stick. Add the peas and cook for another minute. If it seems dry, add more pasta water. You do not want it to burn!
Once the ham and peas are heated, add the cooked. Green Lentil Safari noodles. Remove from heat and toss with soy sauce and sesame oil. Toss with the sliced scallions and sesame seeds and serve.
Add Sriracha or Sambal as desired for a spicy kick. Enjoy!
