Green Lentil Cheesy Mac*

Ingredients:

  • 2 tbsp Butter
  • 1 tbsp Flour
  • 1 C Sharp Cheddar Cheese
  • 1 C Fontina Cheese
  • 1 1/2 C Half and Half, low-fat milk
  • Freshly ground sea salt and black pepper
  • 12oz Tolerant Green Lentil Elbows or Penne

Directions:

  1. Shred cheeses and set aside
  2. Prepare Tolerant noodles according to box instructions
  3. Melt butter in saucepan – do not burn
  4. Add flour, freshly ground pepper and sea salt – whisk until mixed with butter
  5. Add half and half – whisk until blended
  6. Cook until mixture thickens, stir regularly to avoid burning. Do not boil.
  7. Add shredded cheeses, freshly ground pepper and salt. Cook and stir until cheese melts and sauce becomes creamy
  8. Add cooked noodles to baking pan, top with cheese sauce and mix until noodles are well covered. Optional: Top with additional shredded cheese OR toss in fresh veggies like Broccoli
  9. Bake at 375° for about 25 – 30 minutes until cheese bubbles and appears heated through
